Kalu Yala is a new town being built in the jungles of Panama in the Tres Brazos Valley in Colon. It's goal is to become the world's most sustainable modern town, and is being built from the ground up, with every aspect of sustainability in mind as it grows. I am working here, along with about fifty other interns this semester, as a Culinary Systems intern. For three months, I am working in the kitchen, learning about cooking, and eating phenomenal food, most of which comes from Kalu Yala Farms and neighboring sustainable, organic farms.
